The slow morning, written down.

Moroccan Mint Tea

for two · ten minutes

  1. Rinse a small handful of gunpowder green tea, then let it sit in hot water for a minute.
  2. Add a fistful of fresh mint. Do not crush it; let it float.
  3. Pour a first glass and return it to the pot, twice. Sweeten to taste.
  4. Pour from as high as you dare. The foam is the whole point.
